Water Chestnut, Chinese Chestnut or Singhara , that goes with the botanical name Eleocharis dulcis is an aquatic vegetable, that grows in marshlands, under water and is a staple in the kitchens from Northern part of India. Singhara is very beneficial because it acts as a coolant, cures jaundice, has antioxidant properties, treats urine infection, cures indigestion and nausea, relieves cough, helps to combat hypertension, improves the blood and is beneficial for the hair. Sometimes called Singhara nut in India, the floating leaves are about 5 to 8 cm long and have hairy petioles 10 to 15 cm in length. The fruit is about 2 cm in diameter. Fresh water chestnuts are available year-round in Asian markets, either packaged or in bins.
